Ingredients
Diced watermelon, seeds removed (I used 3 slices but you can put as many as you want) 2 medium cucumbers 1 red onion 1 handful of field salad or valeriana Juice of 1 lime + wedges for serving Olive oil Fresh mint leaves
Method
Slice the red onion and cook it in a pan on low-medium heat for a couple of minutes. Let it cool and move it in a big bowl.
Dice the cucumbers and watermelon and add to the bowl.
Wash the field salad and mix with the rest.
Pour olive oil, squeeze the juice of one lime and add mint leaves.
Serve with lime wedges.
It's as easy as that!
